A Great Way to Use Leftovers
Fried rice is a simple dish that is easy to create, and the best part is you can make it with potential leftovers from previous nights. Combine rice with some vegetables and maybe a protein of your choice and you have a delicious meal ready to eat.
This variation on fried rice is one I make when I have leftover white rice from a night or two before after having takeout. If you don’t have leftover rice, you can quickly make some and then still create this amazing dish.

Prep: 10 minutes — Cook: 10-15 minutes
Ingredients
- 2 cups of cooked rice, cooled
- Bag of frozen vegetable medley
- 1 clove of garlic minced, approx. 1 teaspoon
- 1 eggs
- 2 teaspoons soy sauce
- 1 tablespoon cooking oil
- sesame seeds for garnish
Directions
- Heat oil in pan on stove over medium-high heat until hot and oil is rippled.
- Add rice to pan and cook while stirring until rice is tender and slightly toasted in color.
- Add in vegetable mix and garlic to the rice and stir while cooking together, about 1 minute
- Add soy sauce and stir to coat the rice. Adjust quantity to ensure that rice is evenly coated.
- In the same pan push the rice to one side and scramble the egg and mix it together with rice.
- Serve hot and add sesame seeds to top to garnish
Additional Notes
- You can feel free to experiment with many different combinations of vegetables in your fried rice. Traditionally, my favorite vegetables to add are onion, scallion, bean sprouts and carrot.
- You can add your favorite protein to the fried rice, just make sure that it is cooked before adding to the rice. I usually add leftover chicken by cutting it up and stirring it in after the vegetables cook.
