Saturday morning rolls around and your wondering what to make for breakfast for yourself or your family. Why not try this simple pancake recipe that is sure to wow everyone.
Made with simple ingredients you already have in your kitchen and with so many ways to make them your own, you won’t be disappointed. I have made this same recipe for years and the reaction is always the same, happiness and wondering if I can make another batch.

Ingredients
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 tablespoon granulated sugar
- 1 1/2 cups milk (depends on consistency of batter)
- 1 egg
- 3 tablespoons melted butter
- 1 teaspoon vanilla extract
Directions
- Preheat griddle to 350°F.
- In a large bowl, combine together flour, baking powder, salt, and sugar until well mixed.
- In a separate bowl, whisk together milk, egg, and vanilla.
- Pour liquid mixture into dry ingredients and stir. Do not over-mix, leave small lumps in the batter.
- Add in the melted butter and carefully mix into the batter being sure not to over mix.
- Once griddle is fully heated, pour batter onto griddle in desired pancake size.
- Cook 1- 2 minutes per side and let griddle reheat before pouring more batter. Time may vary depending on thickness of the pancake.
- Serve immediately with desired choice of toppings.


Additional Notes
- If you batter is too thick, add a little more milk to thin it out. I like to add close to 1 1/2 cups milk instead of the 1 1/4 cups.
- I will sometimes preheat the griddle to 370°F and then lower to 350°F when I pour the batter because the temperature will drop form the cool batter.
- Try adding some blueberries or chocolate chips into the batter before cooking to add more flavor to the pancakes.
